Q. Is it a good idea to apply for a visitor visa at the same time that the sponsorship application is taking place?

Answer: There is no bar to submission of an application for a visitor visa pending the outcome of a permanent resident application. Your application for the visitor visa may be affected by the pending PR, in that the latter would create the impression that you do intend to remain in Canada permanently.
